Spinach Quiche cups... anyone make it

with paper liners instead of the foil ones?  I don't have foil in the house but will go buy some if I need too.  Wil the egg soak thru the paper?  Or does the foil help it cook faster?

I used paper OK, but that's the only SB recipe I've made that I don't like. It tastes

Thank you for the advice I will try to add some other stuff, I have sun-dried tomatoes so that would be awesome.

Okay, don't laugh at me, but when I bought the foil cups to bake these each one was lined with a paper liner. Was I supposed to throw that out and only use the foil? I put the foil with the paper in my muffin pan. The end product was pretty well stuck to the paper despite using the non-stick spray, and the paper liners pulled away from the foil while baking. Does that help answer your question?

As for the quiche cups, I agree that they're dominated by the spinach. Adding other veggies would help, or just use less spinach. Don't get me wrong...none of them went to waste! I just made a note to do it a little differently next time :-)

I agree with the overwhelming spinach and there is NO way 2 of those would suffice for lunch! Save them for a quick cold snack at work.

Mel I just poured it all into bread loaf pan (sprayed with cooking spray) - then just slice and reheat in microwave.

I like spinach but I've also substituted with broccoli and asparagus. I used the frozen type and just microwaved it like the spinach. I too, didn't have any foil cups in the house so I just doubled the recipe and used a square, pyrex baking dish. After it was cooled I cut the quiche into squares and clear wrapped each slice (kinda like brownies at a bake sale). That way I could just grab one or two and go. Hope that helps a little.

Thaw the frozen chopped broccoli and drain off the excess water, then use.
