What are sugar alcohols? And what is their effect?

Is evaporated cane sugar a fancy, organic way of saying 'sugar'?

Sugar alcohols is a misleading name... this group of compounds is actually called polyols (carbohydrates) and have their own pathway of metaboliam in the body which takes much longer to complete then the glucose metabolism pathway. Polyols do not effect glucose and insulin homeostasis and have thereby been deemed a safe sugar for diabetics, and for us SBDieters.

However, there has been some implication in the build up of polyols in lens cells (eye) that contribut to blindness in diabetes patients, so although polyols are safe on this diet, don't overdo it.
