Phase 2...what now?

Hi everyone...I'm a frequest lurker and strong believer in the SBD. I lost about 10 lbs. on phase one and today is my first day of phase 2. I have the book, but it's not too clear on how to start phase 2. I read that you need to start off slowly - adding a little bit of good carbs at a time so you can monitor how you handle them. But in the phase 2 eating plan, there seems to be carbs at almost every meal. Any advice for me on how I need to do this...I am so nervous!
Today I had a whole grain waffle with ricotta/splenda/vanilla mixture on top...pistachios for snack...south beach tuna salad for lunch. Is the waffle enought carbs for the day? Should I just add carbs to breakfast for now then move on to more after a week or so? Any information would be much appreciated!
