Starting Phase I and questions

Hi all,

I am starting Phase I. Have been reading the posts for menu ideas. I love scrambled eggs and V8 juice so breakfast is not a problem. I love salads but have a question on salad dressing- are there any good store bought brands that you can recommend that are Italian or a good premade vignagrette? I currently have Seven Seas Viva Italian Reduced fat. It says it has 2 g carbs and 1 g sugar per serving (2 Tbsp)- is this an acceptable dressing to use on Phase I?

I am currently unemployed and so trying to stay on a budget and not spend a lot....also trying to use what I already have. I have a big bag of chicken breasts in the freezer and I found the Monterey Chicken recipe (I am NOT a good cook LOL and am looking for easy recipes). Will also make chili for Phase I. And will try some burgers without the bun (Is lean ground beef okay for Phase I? Or should I save it for Phase II?)

I think once I get through Phase 1 I will be okay. Phase II allows whole wheat bread and pasta, and fruit, so I can definitely live with that. These first two weeks will be tough though.

Yes,

Ken's light salad dressings are really good. We use the Ken's Light caesar to marinate chicken in. It is so flavorful and moist. Especially good when grilled.

The first two weeks are tough, but I guarantee that when you start phase 2 you won't even miss you bread and pasta!

Good luck!
