Hi,

Newbie here, just finished my first day :) I'm so excited.

Looking over my menu for tomorrow. I have the Canadian bacon...what do I do with it? I got it at the deli counter. Do I cook it? If so, how? Or do I just heat it a bit?

Also, what else can I do with ricotta cheese in Phase 1. I just can't stand it as a dessert. Started with the mocha one tonight, but I could barely choke it down. It's worse than the V8 for me. I think I'll find those no-sugar-added fudgsicles for my dessert. So, what can I do with the 2 containers of ricotta I have?

I stick in in the frying pan before I put my eggs in to just heat it a bit.

You can also chop up the canadian bacon, saute a little, then add your eggs (eat the meat as part of your omelet... don't forget to add the veggies!

How about making eggplant lasagna? Instead of pasta, slice the eggplant in thin slices and layer them with a mix of ricotta, low-moisture/part-skim mozzarella, chopped spinach, and parmesan cheese, no-sugar tomato sauce (or make your own meat sauce), and bake.

I like to take my Canadian Bacon and spread a little fat-free cream cheese on it and wrap a dill pickle in the middle.
