Hi! I'm on day 5 of Phase 1 and this is the second day that I've had to get lunch at the office. I'm finding it not as easy as I thought it would be. Does anyone have any suggestions? I am really bad about packing a lunch, and right now it is all I can do to get up early enough to eat breakfast!
Thanks,
Jaime

Good luck! -Christine
Jaime what are some of the choices you have at work?
Here's what I would pack.... A big old bowl of salad
* with rolled up deli meat and reduced fat cheese (lay it on top of each other, roll it up, slice into little rounds - - you can put them in baggies or right on top.

Hi Jamie, welcome!

Make all your stuff the night before you go to work and leave it in the fridge.
I agree with packing lunch the night before. If not, I end up eating out...often, that means the school cafeteria for me. Sometimes it is SBD friendly, but it isn't always. Leftovers work for me. Right now, I'm into a lot of soups for the winter. You can make SBD friendly soups in a crock pot or large pot and freeze them in individual containers to take to work.
Also, if you are going to have salads, they do not have to be boring and you can make them so they are very filling.
Try a chef's salad with julienned strips of turkey, lean ham and cheese, tomatoes, cucumber and instead of Russian dressing (loaded with sugar) use a vinaigrette.
I love Greek salads. I use low fat feta, cucumbers, tomatoes, olives and onions. Kraft makes a really good Greek salad dressing.
In the book is a wonderful recipe for Salade Nicoise (from South of France) that has green beans, sliced hard boiled egg, cucumber, tuna (from a can) tomatoes and cukes. I like to add red peppers.
Yesterday I made a huge batch of chicken salad that we had for dinner and I will nosh on for lunch. I boil chicken breasts in salted water. When cooked I cut them into bit sized pieces and add salt, pepper and lots of (dried) taragon. Then I use a few spoonfuls of light mayo, toss in some chopped celery and or onions. To dress it up I have added toasted pine nuts or a couple of TBS of blue cheese.
And always, the night before's leftovers make great lunches!

On a totally different note, I saw my doctor today for some allergy issues and told her that I was doing SBD. She gave it very high reviews and only had one request. She said please, please get some exercise too!
Jaime
That's great to hear that your doctor gave a big thumbs up to the SBD, Jaime.
