Just starting out - with questions

I'm going to be starting the SBD on Mon, 1/12 (party this weekend, so I'm figuring, why blow it so soon). Anyway - I have 2 questions. First of all, I have an allergy to shellfish, and I've noticed that there seems to be quite a bit of shrimp recommended. Anyone have any ideas for substitutes?

Also, breakfast is an issue for me. All of this making omelets stuff just doesn't work. I have an 11 month old who gets up at 530, and between taking care of him and getting myself ready for work, there's no way I can cook a breakfast. I need something I can pack and go with - I usually eat when I get into work. Any ideas?

and since skim milk is now allowed on Phase 1 why not low fat no sugar added yogurt?!

Yes you can have yogurt just not with fruit - it has to be plain yogurt.

LOL...yogurt has been my staple breakfast food for I can't tell you how long. I'm so sick of it I could just throw up at the thought. So, I'm definitely looking for different ideas. I guess what's throwing me is that I don't have to eat "breakfast" food for breakfast. Like I love the turkey roll up idea, but I have to convince myself that I can eat it for breakfast, instead of lunch.

The veggie quiche are easy and yummy too. I made a batch Sunday night, put a couple in the fridge and the rest in the freezer. All you need is a few seconds in the microwave and - Voila! - breakfast that isn't hard-boiled eggs.
