Before my lunch break I was reading a thread (can't find it now) with many people questioning the rule about "1/2 cup of veggies with breakfast, 2 cups with lunch and 2 cups with dinner". They were saying that they hadn't read this rule in the book and didn't know where it came from.
I've noticed that too, having not read that in the SBD book or as I can recall, in any of the interviews. I've only read it on the board here. I've searched and can't find anything that specific. I think it's a good idea and a very good suggestion, but I don't believe it's a "rule" on the South Beach Diet. Maybe it's best to consider it a helpful guideline.
If you look through the menu plans for both P1 and P2, you'll see that not all meals include veggies. Most do, but not all. Overall though, there are plenty of veggies on a daily basis. :)
Here's something I found about the importance of veggies on page 111: "Phase 1 does not have to be low carb if you eat the right carbs. It is designed to allow ample portions of protein, good fats, and the lowest-glycemic index carbs needed for satisfaction and blood sugar control. These include the low-glycemic index vegetables, which also contribute fiber, important nutrients such as heart-healthy folate, and other vitamins and minerals. Many salads and vegetables are unlimited......The South Beach Diet doesn't require you to measure what you eat in ouces, calories or anything else. The meals should be of normal size -- enough to satisfy your hunger, but no more than that."

Maggie, Let me forward the page I copied from SB-Online...
