Just wanted to share a satisfying soup I made on Saturday

Saute in olive oil until soft

onion

red pepper

celery (including the leaves)

mushrooms

zucchini

Added 2 cans of low sodium chicken broth

1 can of diced tomatoes with jalepeno

some leftover taco beef

1 can of navy beans

1/4 bag of baby spinach went in at the end.

It was delicious and hearty for lunch the past 2 days, this morning I rinsed the V-8 bottle out with a cup of water and added that to the pot. I'm going to look for escarole when I go shopping today and maybe some kidney beans. This could go on indefinitely, lol.

great way to clean out the vegetable bin and diced chicken would be great in it too. To make a thicker soup you could puree the beans.

It's been so cold here that soup sure tastes great.
