Diff. betwee ricotta and ricotta creme?

Hey ladies. I bought part-skim ricotta cheese and it's kinda gritty. I keep hearing you talk about ricotta creme.... is that something different? Is it commonly found... in the same place as the cheese? Thanks

Nah, ricotta is ricotta any which way you slice it...

A ricotta creme is a recipe from the book or website. You can make vanilla, chocolate, almond, or lemon. Basically you take ricotta, add vanilla extract, Splenda, and whatever else the recipe requires depending on which one you are making (unless it is vanilla, for which those are all the ingredients).

I live in Michigan, where the ricotta is kind of "gritty," as you said. However, I went to my home state of NJ for a couple of weeks recently, and even the store brand ricotta was MUCH creamier. I think it depends on the Italian population :) We love our ricotta, but I guess we aren't as populous in Michigan as we are in NJ. But if you mix "gritty" ricotta enough with a spoon, it gets pretty creamy without too much effort.

So be glad if you live in the NY/NJ area, because the ricotta is definitely superior to that of the Midwest!
