Even though they're saying Atkins, I can't help but think that the popularity and success of the South Beach Diet is what tipped the scales (so to speak) in favor of altering restaurant menus. When so many thousands of people want a certain type of food and it hits restaurants in their pocketbooks, then you get positive change. Hurray!

This is an excellent thing and it's about time the food industry takes notice.
