Meatless Phase 1 Friendly Appetizers?

I am going to a little get together with some friends tomorrow night and am supposed to brings some goodies, I was planning on bringing a veggie tray with hummus, but does anyone else have any good ideas for meatless (seafood ok) phase 1 friendly appetizers?


I know what others are bringing and it is meat and no SBD friendly food, so I want to make sure I have something pretty hardy so I am not tempted.

how about cucumber rounds with light cream cheese or laughing cow, and a little seafood on top (tiny shrimp--from a can, flaked crab, smoked salmon)

I also love just simple cold, steamed shrimp.

I've done stuffed cherry tomatoes with a mixture of cream cheese and herbs that everyone usually likes. I also like to do marinated mozzarella - You can buy pre-marinaded or do it yourself with olive oil, herbs, sundried tomato, etc. Cut into cubes and stick with a toothpick. Marinated shrimp skewers would be good too - I like to do mine with a tequila-lime-chili marinade and then grill or broil. If I'm doing them for appetizers I do only 2 per skewer. Asian-style lettuce wraps with tofu instead of meat is another idea (or you could leave out the tofu and just do carrots, cabbage, bean sprouts, etc.)
