I plan on making meatloaf for dinner tomorrow and I usually add a cup of breadcrumbs to 2lbs hamburger. Would the breadcrumbs be considered a grain serving?

They do count towards it; just kind of eyeball it and use your best judgment.
Honestly I never got that fussy about counting servings like breadcrumbs for binding or coatings on stuff, etc. And obviously now in phase 3 I don't even give stuff like that a second thought.
I personally really like using oatmeal as a binder in my meatloaf - I think its much lighter and gets a "fluffy" type meatloaf, rather than a "doorstop" meatloaf like I get with ww breadcrumbs. Plus its a much more neutral, light, flavor than the whole wheat and doesn't take over.

Just a quick whiz in the food processor - just til its about the same consistency as bread crumbs.
