Easter Menu?

So, I know there's been a bit of talk here and there, but does everyone have a good menu already planned out? I am mostly responsible to do it, and I am just not coming up with much.
Frankly, I know I'll do the "illeagal ham" with the potatos. But that's where I want the illegal to stop. I thought about a broccoli/cauliflower cheese casserole and some asparagus. And really... I just don't know? Maybe homemade wheat rolls?
I am used to doing holidays BIG and VERY unhealthy. I don't want to go overboard, but I don't want to completely be different. That just is so hard for me on a traditional holiday.
Input please!



Here's my Easter menu:
Ham (served with a variety of mustards)
Tri-Color Roasted Rosemary Potatoes (red, white and sweet potatoes)
Roasted Asparagus w/ Lemon Zest
Mescalum Salad w/ Goat Cheese & Pine Nuts
Strawberries & Whipped Cream
(so the only thing I need to avoid are the regular potatoes and that's easy!)
I just found out today that I'm putting on a lunch/brunch for several people.
Well, I had everything all planned out at one point, and have since changed it all up!

Everyone: Great ideas in here. I am narrowing mine down quite a bit, so we'll see! I know I found out the ham is legal, so I am excited about that.
I will be making homemade wheat rolls
Spinach casserole
Potatoes (which I will have little or none of)
and ??? My sister in law will help decide the rest and we'll cook it all up together.
