Quick Roasting Question

I am roasting potatoes to serve today (a mix of white, red and sweet potatoes). I have cubed them and put them in a large casserole dish with olive oil, rosemary, salt and pepper. They are not laid out flat on a cookie sheet as I usually do. Will they roast okay like this as long as I stir them around frequently? Or do you think I'll get mushy potatoes from the steam that the ones on the bottom of the dish will create?

I prefer using 2 trays and keeping them in a single layer.

I also like to use no-stick foil on the bottom if you have it.

Yeah, you're right. I'll brown them and then transfer to the serving dish. I was hoping to cut back on things to clean, but using foil will help. Thanks!!! Happy Easter!
