Help me with dinner tonight!

I am lazy today and feeling blah. I've been a bad South Beach girl and I want to get back on track tonight! I have no motivation to cook and I need help!

I have center cut pork chops and need a quick and easy recipe. I have leftover asparagus and mescalum salad with goat cheese to go with it.

Any ideas?

I made pork chops last week, and I just seasoned them with Lawry's, then pan fried them.

My favorite pork chop recipe that is SUPER easy...

Pat dry, season with salt and pepper.

Heat olive oil in pan, get it nice and hot (*almost* smoking) add chops and get a nice golden crust on each side (if they are thin they should cook through while browning, if not, turn down heat and cover til done)

Take chops out - add a couple cloves garlic and cook about 1 min. Deglaze with either a combo of white wine and chicken broth or just broth (about 1 cup total liquid - I like to do half/half but just stock is okay if you don't have any wine open) Add 1 T worschestershire, 1 T dijon mustard and 1 T of vinegar or lemon juice. Whisk, crank the heat and boil/reduce until its thickened. Looks like gravy when its done. Pour over chops. The whole process takes me about 15 min max and its ingredients I always have on hand. Its one of the few dishes dh has actually mastered from memory as well without me having to yell directions from the other room!

This sounds fantastic! Chops are always so hard for me. No matter what, somehow they always seem dry and bland, though I initially think I do like them.

Thank everyone for the great ideas!

Grilling...easy, but we're out of propane for the grill.

Glaze with jelly...sounds yummy but I don't have any sf jelly on hand at the moment.

It looks like I'll be trying Michael Ann's recipe.
