Tonight was Maple-mustard glazed porkloin chops, steamed green beans, sauteed yellow squash, and ww bread


Tuesday: Grilled balsamic-black pepper sirloin steaks, roasted vegetables (usually broccoli, peppers, onions, carrots, mushrooms, asparagus)


Weds: MichaelAnn's chicken sticks and assorted crudite with Lite Ranch for dipping


Thurs: Jamaican Jerk chicken burgers on ww buns, and some sort of slaw


Friday: Teriyaki salmon, roasted asparagus, cauliflower fauxtatoes


Sat/Sun: TBD

Thursday: Unstuffed Cabbage

Saturday: Eggplant Lasagna

Yesterday I made a huge crockpot full of chili (light and dark kidney beans, black beans, garbonzo beans, peppers and onions). We have enough to last all week! It will be great for lunches.


As for the rest of the week, I have no idea! I need to go grocery shopping. I have some tofu, tempeh, and seitan so I'll be using those.

Sun: Easy Skillet Penne (WW) with chicken sausage, sundried tomatoes and spinach


Mon: Tortilla Chicken soup and WW cheese quesadillas


Tues: Either more Tortilla chicken soup -or- WW Ravioli and salad

I can't decide! I want to make homemade pizza's again this week, I think. W/salad.


I want to do the parmesan crusted pork chops and maybe a side of sweet potato's baked in the oven like chips, if I can find the link to do that.


I am DYING for chicken saltimbocca with lots of steamed spinach to pour the juices over.


These are what I'll probably make. But I haven't been able to shop. I hate not being prepared.

Could you please post the recipe for the eggplant lasagana? I am new to South Beach, in fact, this is my 2nd day on Phase 1 and this sounds like something I would like to try.

Hi Char, this is the recipe I found for the eggplant lasagna. It belongs to Michael Ann. I haven't made it yet, so it will be my first time making it as well.
