Hi everyone, Happy April!


I am going to a teacher's conference this weekend and will be eating on the go all weekend.  I am not worried about eating at restaurants, which I will do for lunch and dinner Friday and Saturday, but I need ideas for BREAKFAST which can be UNREFRIGERATED because we didn't get the hotel with the fridge and the microwave this year.  :o(  I only need for Friday and Saturday morning, we aren't leaving until Thursday afternoon.  I will take a cooler but don't know how well that will do keeping stuff cold for 2 whole days.


I was thinking apples with NPB or even making ahead 2 SBD friendly PBJ sandwiches ahead of time.  Gonna take my almonds and individually packaged cheeses and V-8 for snacks plus a big bag of snap peas.  Any other ideas would be greatly appreciated!!!!!


Bad thing is, the tradition at these conferences is for all the teachers (5 of us) to bring candy and chocolate and throw them on the desk in the hotel room for a free-for-all.  Good news is that we hardly spend any time in the hotel room, and I will come prepared with my own healthy snacks.  The other good news is that I usually dictate where we go for eating because I go to Columbus so much everyone always trusts my judgement on where is good to eat!

I think you're ideas are great! Bring along a lunchbag/insulated cooler and some cooler paks and your cheese, etc. should be fine. You might want to bring some extra ice paks and ask the hotel to freeze them for you so that you can use them if the other ones start to defrost.


As for bringing food for the meeting room, how some nuts? You might even want to make the cinnamon nuts that were posted in the recipe folder the other day.

A lot of times we bring cereal on vacation for breakfast - even without a fridge you can often get single serving milk cartons from the hotel restaurants or a nearby convenience store. SBD cereal bars are great for breakfast on the run - pair that with some dried fruit and nuts. Apples, bananas and oranges are great for breakfast too.

I would most likely bake a batch of SBD-friendly muffins before going and have those!
