Sorry yesterday I ask about cottage cheese I meant pimiento cheese. If not legal just bought out of the grocery store is there a legal recipe? Thanks Ya'll

So do ya'll eat pimiento cheese homemade? Would it be legal if I just use grated FF cheddar cheese, pimientos and mayo and mix until it is smooth? What do ya'll think? And yes I'm from the south!!

Kelly, as long as you used fat-free or 2% shredded cheddar and watched your amount of low-fat mayo, I don't see any reason why you can't enjoy the pimento cheese. You'll only want to put enough mayo in it to moisten it, since a serving of low-fat is no more than 2 tablespoons.

I haven't made any since starting South Beach in January, 2007. I think I had half a pimento cheese sandwich last Christmas, when my Mother made some. Once a year is enough for me!!!
