another spaghetti squash question

Is it possible to over cook the spaghetti squash? I read the thread on it and tried putting it in my crock pot during the day while at work and it just seemed like mush to me. It's the 2nd time I've tried it. The first was in the oven and I definitely get it done enough. This time, there was no flavor and the strands just fell apart. I really want this to work as I have heard great things about using it as a pasta substitute, but I can't seem to get it right.

I'm sure it's possible to overcook it, just like any other vegetable.

This is a spaghetti squash:

When cooked and the "meat" it removed, it literally looks spaghetti (long stringy strands) and it is a great substitute for pasta. Here is some information from our board:

Spaghetti squash is easy to overcook IMO. I have stopped cooking it in the microwave for that reason. Now, I cut it in half and roast it upside down in a baking dish until it is soft to the touch (about 45 minutes). Not only does it come out perfectly, but it takes on a wonderful nutty flavor.

I'm going to try roasting my next one this week.

I used to cook mine in the microwave and always thought it was too watery.
