Let's share our meal plans for the week and get some new ideas for next week.
Here's my plan:
Monday:
Thai Style Halibut w/ Coconut Curry, Steamed Spinach, Brown Rice
Tuesday:
Roasted Chicken Breasts w/ Rosemary & Garlic, Couscous, Steamed Broccoli
Wednesday:
Chicken & White Bean Soup w/ Spinach
Thursday:
Grilled Cheeseburgers on WW Rolls, Cucumber & Feta Salad
Friday:
Pecan Crusted Flounder, Green Salad, Steamed Mixed Veggies
Saturday:
Steaks on the grill, Sweet Potato Fries, Cucumber & Feta Salad
Sunday:
Buffalo Chicken Chili, Roasted Veggies



I think I might try the buffalo chicken chili this week, too.

Here's my meal plan for the week. I usually don't decide what I'll have each night, I just kind of pick and choose from whatever I feel like making. A lot of that depends on the fresh produce I have in the fridge at any given time and what we have leftover!!!
Monday:
spaghetti pizza casserole, roasted asparagus & onions w/Montreal seasoning, cool cucumber salad
Mediterranean meatloaf, black-eyed pea salsa, sauteed bell peppers
pork tenderloin w/mustard sauce, zucchini cheese casserole
San Francisco chops over brown rice, turnip greens
SB legal pizza, salad

Monday: broiled halibut with roasted veggies (zucchini, asparagus, and acorn squash)
Tuesday: stuffed chicken breasts (stuffed with feta and sun-dried tomatoes), steamed artichokes and sauteed green beans
Wednesday: steak salad
Thursday: grilled shrimp kabobs, sunomono, sweet potatoes
Friday: some sort of stir-fry
I only have planned through wednesday as I am planning mid week to mid week these days based on when I get to the store. so far here goes:

How do you do your roasted chicken breasts?

I'm using chicken breasts with the bone. I just season them with salt, pepper, garlic powder and rosemary and bake them. They take about 25-30 minutes. Then I remove the skin. If you use heavy duty aluminum foil, there's no clean up. It doesn't get much easier than this!
