I thought I would challenge everyone to try a new food this week. Is there something you've been thinking about trying? Maybe a new Morningstar product? Maybe a new vegetable or fruit? Let us know what you're going to try, then later in the week we can report back.
I'm glad you tried it and liked it! I'm the one who roasts it upside down, but I've never put it in the microwave first. I've always found it watery when cooked in the microwave so that may very well be the reason. Some people don't mind it that way. You could always just soak up the water by pressing it gently with a paper towel before scraping out the 'noodles'.
I tried spaghetti squash this week as well! It came out very good and I will definitely buy it again. Even my 16 months old liked it when I put some tomato sauce over it. I think she thought it was pasta. :) I have a question for all those who don't microwave the spaghetti quash first. How do you cut it in half? I wasn't able to do so without microwaving it first for a few minutes (as someone here previously suggested) to soften it a bit. Are my knives sub-par and do I need more time at the gym? ;) Or is there another trick to get it cut in half before roasting? Mine did not come out watery after microwaving for a few minutes and then 1 hr at 400 degrees cut side down, but I'm wondering if there is a better way?
Also are MS veggie burgers allowed in all phases or just starting with Phase II? I just checked out my daughter's MS Garden Veggie box and it lists brown rice as an ingredient. Also, do they count as a protein or a veggie?
I've figured out (by accident) that it's easier to cut the squash in half by it's circumference (rather than length-wise). It cooks just the same and you are less likely to cut your fingers off!

I roast mine cut side down but have never microwaved it first.

That's one reason I microwave mine first...slicing a spaghetti squash is just so darned difficult!
