How is your week going? Today's assignment is......
Eat More Veggies
It's one of the absolute best things you can do for your diet; and it doesn't mean you have to gnaw on celery sticks all day long. Here's why — and how — to sneak more veggies into your meals.
They keep you full longer so you're less hungry for not-so-healthy stuff.
Diets that are high in vegetables are often less "energy dense." (In this case, the word energy is another word for calorie, so energy-dense foods pack lots of calories into only a small amount of food.) By eating plenty of veggies each day, you'll actually get to eat more food, while taking in fewer calories.
They're packed with nutrients.
Vegetables contain lots of important vitamins, minerals, and other substances that are hard to get anywhere else, like potassium, vitamin C, vitamin K, folate, and fiber.
They taste even better than you think.
There's no need to munch on plain, boring carrot sticks or suffer through a dry salad. Enjoy your veggies with healthy dips and dressings like vinaigrette, hummus or bean dip. Or make the veggies themselves the dip; salsa packs tons of flavor. And don't forget about veggies on pizza, in soups (like minestrone), and in sauces (like marinara) — they count too!
Are you eating 4 1/2 cups every day? Do you have a favorite vegetable or veggie recipe? Have you tried any new or different vegetables or recipes lately? Challenge yourself to try something new this week.

I have really began to slack on my veggies but today I am making a big pot of veggie soup to have before or in between meals.
Veggies is the area for me I usually do really well on.
