As Cathy sadid - colesalw, baked beans. I've been doing strawberry spinach salad a lot lately and its always a big hit. Fruit salad, 3 bean salad or a roasted veggie pasta salad. I also do a black, avocado, mango salad quite often.
I love grilled veggie kebabs.....chunks of red onion, bell pepper, zucchini, tomatoes & mushrooms on a skewer. You can make them plain or baste them with Italian salad dressing.
When I BBQ I usually do a veggie packet. Chunk up some zucchini, yellow squash, and mushrooms. Throw them on a sheet of tin foil with some ICBINB spray and some garlic salt or seasoned salt. Fold up the packet and put it on the grill and the veggies will sort of steam while your meat is cooking. It's really good!
Here's the baked bean and coleslaw recipes that I use:
Baked Beans
* 2 cans white beans * lean ham or turkey bacon or canadian bacon * 1 onion, chopped * 1/4 1/4 c splenda * 1/4 c sugar-free maple syrup * 1 T worschestire sauce * 1 teaspoon salt * 1 cup water * 1/4 cup sugar free ketchup * 1/4 cup sugar free BBQ sauce * 2 tablespoons prepared mustard
DIRECTIONS:
1. Drain and rinse beans. Combine all ingredients in casserole dish. Cover and bake at 350 degrees for 1.5 hours. Uncover and bake 30 min more. Stir often or it will stick to the pan.
Bean Salad Dressing: 1/3 cup vinegar 1/3 cup Splenda 1/4 cup oil 1 T dijon 1 T worschestershire
I mix a huge bowl of kidney, white beans and cooked green beans - then toss with the dressing. Its great heated up or served cold at a picnic/BBQ
Coleslaw
Bag pre-shredded coleslaw mix # 1/3 cup granulated sugar # 1/2 teaspoon salt # 1/8 teaspoon pepper # 1/4 cup milk # 1/4 cup light mayonnaise # 1/4 cup plain, non-fat yogurt # 1/4 cup fat free buttermilk # 1 1/2 tablespoons white vinegar # 2 1/2 tablespoons lemon juice
And here is the strawberry spinach salad:
Dressing * 1 tablespoon poppy seeds * 1/4 cup white sugar * 1/2 cup olive oil * 1/4 cup Balsamic * 1/4 teaspoon paprika * 1/4 teaspoon Worcestershire sauce * 1 tablespoon minced red onion
* 10 ounces fresh spinach - rinsed, and torn into bite size pieces * 1 quart strawberries - cleaned and sliced * 1/4 cup almonds, slivered
Mix dressing ahead of time, pour over spinach, berries and nuts just before serving and toss.
