Monday: salsa chicken, whole grain Spanish rice, sauteed spinach, salad with artichokes, tomatoes, arugula and pesto dressing
Tuesday: leftovers
Wednesday: tilapia w/ shrimp & crabmeat topping on a bed of spinach, brown rice
Thursday: chicken parmesan over spaghetti squash
Friday: Chicken Satay Burger & Asian Slaw
Saturday: out for dinner
Sunday: Ginger-Dijon Glazed Pork Tenderloin, baked sweet potatoes, zucchini



Tuesday: Jalapeno Fish Chowder (no recipe-making it up as I go!) and salad
Wednesday: Karen's Roasted Red Pepper-Feta fettucini, spinach salad w/ red onion and pine nuts
Thursday: Grilled Shrimp Cesar salad, w/w garlic bread
Friday: Dinner out
Saturday: Vegetable lasagna (Gia Russa recipe), roasted broccoli and red peppers
Sunday: Mother's Day Brunch

We're having an uninspired food week here.
Monday:

Turkey Tortilla Casserole (without the chips)
