OT - advise on restaurants in Vegas?

All right, I know we have some serious travelers here on the board, so I am looking for some advise/reviews of restaurants in Vegas.

Dh and I are going in June. He's going for a business/trade show thing, I'm tagging along. We will be there 4 nights, at least one, probably two nights will be business dinner/events. Dh's company is on the buying end, so he will be wined/dined/schmoozed by a few companies while we are there. One is paying for our hotel, then one night they are taking everyone from his company to Spago for dinner and another night is a catered party/concert.

So that leaves two nights for dh and I. There are SO many restaurants in Vegas I want to go to - I've been researching and I'm having a hard time picking just two!

I'm not overly concerned about them being SBD-friendly. I actually find it pretty easy to stay on the beach at the more elegant restaurants (usually with seafood/veggies and their portions are small). Any price range, I really want to go all out for at least one night. On the strip would be best/most convenient.

Any favorites?

I can't remember the name of it, but there is an awesome Mexican restuarant at MGM...mmm...I'm salivating just thinking about it!

I've only been to Vegas once, but we had dinner at Prime in the Bellagio.

Definitely on the right track! No casual LOL! The whole trip is paid for, so we can certainly afford to splurge BIG on at least one dinner. Picasso was actually #1 on my list so far - so its good to hear its popular here too! I'd originally thought Le Cirque, but after reading reviews on some other message boards, it seemed the con consensus was that it didn't quite live up to the hype/price.

This isn't for dinner, but for breakfast or lunch the Bellagio has/had a great cafe associated with their spa. I was on WWs at the time, but the menu told all about their food- calories, fat and fiber content.
I saw that Picasso got a James Beard nomination for their wine this year. I've been dying to check out Michael Mina myself. His SF spot is supposed to be really good.

Cool - good to know. I think for breakfast I may be stuck going with dh and "the group", not sure yet. I hope not 'cuz its all men he works with, I'm the only wife that wanted to go! But lunch I will be on my own completely, so I may have to check that out!

There is a restaurant off the strip (if I remember correctly it's near the older casinos) called Roy's. It's an Asian-Polynesian inspired restaurant. I believe there are several in the US and they have a website (you can google it). I was there a few years ago and it was VERY good and a bit different than all the 'famous-chef' restaurants on the strip.
