I am bringing a dessert to a gathering on Saturday and one of the guests is wheat intolerant.  I decided to bring a fruit crisp with an oatmeal topping (he said that was fine).  The recipe I have has a little bit of flour in it too and while I could probably just leave it out I was hoping to find a non-wheat substitute.  Does anyone have any experience with other flours and what might be a good option?  Thanks!

I use spelt flour a lot. It's very similar to wheat flour, and in fruit crisp, I don't think anyone would even know the difference. You could also use oat flour (if you don't have it, you can just blend some oatmeal in your blender). There's also kamut, quinoa, and amaranth flours, but I haven't used any of them.
