This Week's Meal Plan -- Please Share!

For the first time in a long while, I had trouble devising the meal plan for this week.  Normally, I consider this a creative process and really enjoy it.  Perhaps I need some new ideas because this week it felt more like a chore.  So, please share!


Here is what I finally came up with (by the way, we normally don't go out quite this much):


Sunday: heirloom tomato salad, whole wheat penne with sausage


Monday: grilled asian flank steak, brown rice and veggie salad with peanut dressing


Tuesday: DH at a business dinner, so I'll either eat leftovers from Monday or get healthy takeout


Wednesday: Grilled margarita chicken and the zuchinni casserole that Cathy posted last week


Thursday: dinner out with a girlfriend; DH gets more whole wheat penne


Friday: dinner out with friends (Vietnamese; hey Cathy, we are going to Slanted Door. Yum!)


Saturday: DH currently claims that he wants to grill burgers.  We'll see if that really happens.


For lunches, I brought tons of salad stuff to work today; but am hoping for some leftovers or other rescue from the same old pretty, but uninteresting lunch.

Monday - We had leftover lobsters from the clambake on Sunday so I made lobster rolls and a tomato, avocado & black bean salad


Tuesday - Grilled pork chops with sate sauce:

I do my weekly grocery shopping on Fridays, so I meal plan Friday through Friday.


Friday: Homemade ww pizza and a green salad


Saturday: Grilled sirloin steaks, sauteed yellow squash and onions with basil, and sauteed mushrooms


Sunday: We went to a wedding and had dinner there


Monday: Ginger Sesame porkloin chops, grilled asparagus, grilled red peppers, and a slice of (legal) ww bakery bread


Tuesday: Spicy Chipotle Chicken Burgers on ww buns (this is the Spicy Chipotle Turkey Burger recipe Cathy posted, with ground chicken breast subbed), coleslaw, cucumbers in vinegar


Wednesday: Grilled sirloin tips, roasted broccoli, and mashed cauliflower


Thursday:

I've been bad with the meal planning lately, but this week I actually have a plan!


MONDAY: I had one pork chop in the freezer, so I grilled that along with 3 chicken breasts (2 to use later). So we had chicken/pork chops with Greek quinoa salad, mini WW pitas & hummus


TUESDAY: I work tonite, so DH cooks for the kids. I'll probably have some tomato soup from the freezer.


WEDNESDAY; Chipotle Chicken Taco Salad (using the 2 chicken breasts from Monday)


THURSDAY: I work again, and the kids have gymnastics. They usually get hot dogs, and I do leftovers again


FRIDAY: I have Bunco...so I make due with whatever is served there. Sometimes it's healthy, sometimes not. DH and the kids will probably make a WW pizza.

DH is working during dinner this week, so we arI don't have a solid plan for the week yet, but here are the main dishes planned:


Monday - Chicken sausages, broccoli, ww mac-n-cheese.


Tuesday - Chicken salad sandwiches (lots of spinach), leftover broccoli.


Wednesday - Crockpot Cheeseburger, green beans, sweet potato fries.


Thursday - Homemade ww pizza, side salad.


Friday -

Hi Jamie,


It's actually one of Newman's bottled marinades -- I thought it was Chipotle Lime, but it's the Mesquite with Lime one.

It has 2g of Sugar per 1 Tablespoon serving, and I've found that's about all I need for each chicken breast.

I am on P1 and here is my plan:

~Tues: chicken, green peppers and red onions sauteed in olive oil

~Wed: chicken, green peppers and red onions sauteed in olive oil (left-over and DH is out of town)

~Thurs: Mustard-Mayo chicken (chicken broiled with mustard and lf mayo on top - yummy); green beans

~Fri: Shrimp Stir-Fry (from SBD site), salad

~Sat: Marinated London Broil, grilled veggies

~Sun: Chicken Capri (from SBD Cookbook), salad

Have you made the chicken capri recipe before? I really like it, but if I recall correctly, there is a typo in the cookbook (and on the SBD website; its never been corrected) regarding the browning time.

I hear you - I typically make my own marinades, too but I also like to keep some on hand for when I'm rushed or uninspired.


The Red Pepper and Sesame marinade/dressing you're trying tonight sounds delish!
