Cilantro Replacement

I've noticed that quite a few of the recipes that have sounded really good lately have cilantro in their lists of  ingredients.


I don't care for cilantro, which is actually putting if pretty mildly.


I'm wondering if there is another ingredient I might be able to substitute.


Right now, I just skip it entirely, without increasing any other ingredients.  This has worked fine so far, but I'm curious if there's something I could substitute that would still work with the other ingredients that haven't been changed at all.

I love cilantro but would say that it is an acquired taste.


In recipes that call for cilantro I would omit it entirely; there is no replacement.

For colour, you could use parsley, and I agree cilantro is an acquired taste, but I have always loved it.

I have an number of friends who share your cilantro aversion; i think its pretty common. For them, I generally use flat leafed parsley, often called Italian Parsley, to give the dishes some green brightness. I would not hesitate to use flat parsley instead of cilantro in a bean salad or the black bean couscous MichaelAnn recently posted.

But it really depends upon the recipe. One well-known chef, Ina Garten (the Barefoot Contessa) had a chicken chili recipe using basil instead of cilantro. I tried it that way once and while it lacked a certain southwestern authenticity, its quite tasty. So, experiment! All that matters is that you like the result.
