I remember reading that you and your family made homemade ice cream a lot in the summers.  can you post your recipe(s).  Ice cream is my weakness, so if I could make some legal, it would be FANTASTIC!!!

Thanks!
Michelle

Did you check the dairy thread in the Phase 1 section?

You know, its been a LONG time since I made homemade. Honestly now that I am on phase 3 I just have low-fat/sugar-free ice cream since I don't really "count" sweet treat calories anymore. Blue Bell sugar free is really good! Or Dreyers. Or we get Sinless @ Coldstone or sugar-free yogurt at TCBY.

I just checked, and yep - its in the dairy thread. For frozen yogurt, I used a combo of milk/yogurt, splenda and then any of the flavorings you would normally use for yogurt (berries, pb, sf syrups, etc.) I've also done the custard version using skim milk, doesn't come out as rich as a regular frozen custard, but its still good.

6 eggs
3 cups milk
3/4 cup splenda
Whisk eggs, milk and sugar in saucepan, heat low/slow until 160 degrees (careful not to curdle eggs)
Immediately chill in ice bath, then refrigerate until totally cool, then pour into ice cream maker with what ever flavorings you like.
