I am having a yogurt before the gym and when I return, I'll have an egg and a slice of turkey bacon and V8.


Not very exciting!

I had a peach and coffee and will have an egg, turkey bacon and some left over zucchini from last night.

I am having some yummy steel cut oats with the delicious crust from the crockpot, MSF sausage pattie, and sf almond roca coffee.

While running out the door to the gym I grabbed a slice of ww bread w/ peanut butter and sf jam. Then after gym class a group of us go out for coffee. Usually I have something more substantial like oatmeal. I always forget to have eggs and omelettes now that I have time to make them in the summer. So, Joy, this was a good idea to inspire others' breakfasts!

Wow, I was just about to start this with DYK. I really need to spend more time on other areas of the board!


Anyways, I am having a smoothie with spinach, blueberries, pineapple, raspberries, and almond milk. Yum!

This is probably my most un-creative meal of the day as I almost always have the same thing.


I started with the bottomless cup of coffee, which I'm almost done with now.


I'll have some yogurt w/ npb before I take my walk.


I think I'll change it up and have oatmeal after my walk.

I was planning on an omelette with diced veggies, but then I came across this recipe so I may give it a try. The thought of veggies with a waffle isn't super appealing though.

Belgian Waffles

Ingredients:
2 large eggs
1/4 C Lowfat Ricotta Cheese (store brand)
1 T Granular Splenda, more or less to taste
1/2 t. Baking Powder
1/4 t. Cinnamon, more or less to taste
(optional)
Dash Nutmeg, more or less to taste (optional)
I think I'll add some vanilla extract, too.

Directions:

Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy
pancakes, but that is not as much fun! Beat eggs with electric mixer on high for 1
minute to make them light and fluffy. Add all other ingredients. Beat until smooth.
Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles.

I am usually running out the door and into rush hour traffic in the morning, so my breakfasts are low excitement.
