I was perusing my local grocery store the other day and ran across Splenda with 1g of fiber added per packet. Has anyone else seen this? I tried to find it online, but couldn't. What do you think about it?

Spotted Splenda with Fiber in the grocery store, but no online press release. It may just be a packaging change because Splenda has always been sucralose mixed with Maltodextrin, which is considered a soluble fiber. Or it may be that they tweaked the formula slightly so they could have this claim (because my old packs of Splenda also list dextrin).
Whatever the case, these packets of Splenda each have 1 gram of fiber, or to put it another way - each packet of Splenda has 4 calories! Yes it may say "no calorie sweetener" but that's only because the FDA allows any product with less than 5 calories per serving to be labeled as "non caloric."
