Freezing Bananas ?

I have a couple of bananas that are about ready to make Banana muffins, but I want to wait til next week to make them- I have a Breakfast Book Club meeting at my house on Friday.  I think I have heard of others freezing bananas, but am unsure how exactly to do it.  Can anyone give me any advice?

I freeze mine all the time - they are great for smoothies that way.

I just peel them, throw them in a zip-loc freezer bag. That's it. For smoothies I don't thaw or anything, I use them frozen - makes the smoothies thick, creamy and milkshake-ish. For the muffins I would pull them out an put them in the fridge the night before so they are thawed enough to mash.

You could also make the muffins ahead and freeze them.

We freeze them with the peels on.

I tried this once and had a HORRIBLE time peeling them when they were frozen. If I had wanted to thaw and use they might have been okay, but I had to literally "chip" the peel off in pieces, pry it with knife, etc. Way more trouble than it was worth. I just use one bag and keep adding to it. How do you get the peel off while they are rock hard?

Maybe he has a secret! But I don't use mine thawed AT ALL - I like to put them straight in the blender as frozen as possible to get my nice creamy shakes! Oh well, peeled and then bagged works fine for me - I think I've been using the same bag for literally years LOL.

Most fruits are this way - once frozen you either need to use them frozen, or understand that they will be mushy when thawed. Berries, melon, peaches, etc. all release water/get mushy with thawing.

But they are PERFECT for smoothies when used still frozen!
