egg casserole recipes?

I am hosting a book club breakfast and I want to make it a SB friendly affair (so I can eat everything!)  I think I am planning on making the Banana Yogurt Muffins, a fruit salad and some kind of egg casserole.  So who has a favorite egg casserole they would be willing to share?  Also any other kind of good "company" breakfast foods would be great also.

I've made a few and never really use a recipe. What I generally do is sautee a combo of onions, peppers, diced ham, mushrooms, cooked turkey bacon or crumbled soy sausage, etc. (any veggies or fixings you like on omelets) I put this in the bottom of a 9x12 dish, then pour eggs on top. I usually use half eggs, half egg beaters (enough to total about 12 eggs) and some milk - sorry, I never really measure, maybe 1 cup? Then I top it with shredded low-fat cheese, cover w/foil and bake @ 300 for about 45 min.

Baked Oatmeal is another great "company" breakfast item I make whenever we have guests staying with us. I'm on my lap top and the recipe is on my main pc, but if you use the search feature on the board, you should find the recipe. We also whole grain mini-bagels w/cream cheese and jam.
