I was on the run a lot, so truly my best lunch was in a restaurant...a Mexican chopped salad with kidney beans, spicy shrimp, romaine, red peppers, and a really great dressing.
My favorite lunch this week was at a local bistro, which I love. I used to order their sandwiches, but since I'm on Phase 1 I had to pick something different. So it was chicken breast stuffed w provolone cheese and ham, greek salad, and steamed veggies!
I made a pot of vegetable soup this week. DH & I have been eating lunches off of it all week!!! So, soup and a piece of whole wheat bread, for me.
I recently tried something new with my soup. I had some leftover spaghetti sauce that was going to waste if I didn't use it. So, I added it to my vegetable soup. And it was great. It gives the soup a totally different flavor.
I've always been a 'go by the recipe' person. But lately, I'm changing things up a bit and experimenting with some of my tried and true recipes and it's turning out great!!!
As far as SBD rules go, you are much better off picking the low-sugar/full fat dressing. There are NO fat rules for dressing on SB, you can use full fat dressings, but the rule is 3g sugar per serving and I'd guess the poppy seed is at least 8g (that's what most bottled are)
I was SO mad when Panera got rid of their Salmon Salad - the lemon vinaigrette was by far their healthiest (and tastiest) dressing. Plus you could get the salad with the salmon, or you could sub grilled chicken. I literally stormed out when saw if was off the menu because now its basically just Caesar there that is totally "legal" - and you can get Caesar anywhere. Used to go about 3x a month and haven't been back since they got rid of it!
I have sandwich most days - usually some combo of turkey, avo, cheese - w/tomato, sprouts, mayo, etc. I think we did tuna once this week and I had leftover chicken once. I'd say I do sandwiches 90% of the time, leftovers 5%, then salads only when out to lunch - maybe another 5% of the time.
For lunch today, I had a Greek salad, with mixed greens, red peppers, tomatoes marinated garbanzo beans and feta cheese.
