Baked Oatmeal ?

I finally tried Baked Oatmeal last night.(we usually have breakfast for dinner one night a week) It was great the whole family loved it, they said it was like eating an oatmeal cookie for dinner.  When I dished it out it just feel apart.  Is this how it usually is?  For some reason I had in my head it was going to come out in nice little square pieces.  I did cut into it pretty quick since the everyone was hungry.  Do I need to let it set a few minutes before cutting?

I agree-LOVE the baked oatmeal!


I don't have problems with it falling apart too bad, but I do make it a little different than the recipe. I only use half the oil called for, and replace the rest with ground flaxseed meal. So it's a little more dense, not as oily. And yes, you do want to let it cool a bit before cutting it.

It sets up as it cools. I usually make it in the evening - sometimes we will sneak a piece right out of the oven, and if we do - that one falls apart. But I put the rest in the fridge for breakfast and it cuts into nice squares. So if you want it to me firmer when serving it, make it ahead of time and heat up individual squares when serving.

Here is the recipe for Baked Oatmeal


1/2 C Canola Oil


2/3 C Splenda


2 eggs


3 C Oatmeal


1-2 tsp cinnamon


1 tsp Vanilla


1 tsp baking powder


Whisk together oil, splenda, and eggs. Add cinnamon, baking powder and vanilla.

That's not the same recipe I use (mine has no fat), but I didn't care for the texture of it the first time I made it.

Here ya' go!


BAKED OATMEAL


2c. oatmeal


1.5 t. baking powder


1/2t. salt


1c. skim milk


1/2c. Egg Beaters


1/2c. pumkin


1.5t. pumkin pie spice


1/2 c. brown sugar substitute (I just use Splenda with a little SF maple syrup)


Preheat to 325.
