After yesterday's spring-like temperatures, there's a fall chill in the air again today. It feels like something should be in the crockpot or roasting/baking in the oven. Maybe a pot of soup will do the trick.

I have a Mexican Vegetable Chicken soup in the crockpot right now. I also want to cook up the spaghetti squash that I have before they (or it) goes bad and I'm going to (finally!) make Pad Thai with spaghetti squash.

Dinner will be one of the two - or something completely different depending on if one or both of my spaghetti squashes are still "ok".

-Corporate Run, 3.5 miles 6/2/11 (36:38, 4 days after running the half!)

We're having comfort food tonight. I made a pot of hot beef on Friday. Which is my Mother's recipe. It's been in the family for ages. I have to make a few changes to it and even then, it's not entirely SB friendly. Along with that, we'll have sweet potato fries, and Cathy's coleslaw recipe.

I'm actually eating it right now (yea, dinner tends to be a little late!) and it's pretty good. It's not the Pad Thai you'd get at a restaurant, but it's a pretty good substitute. I'll post the recipe later.
