Nutritional Value of Certain Vegetables

Some vegetables have very, very little nutritional value (celery, cucumbers, lettuce, etc.).


Even one cup of spaghetti squash only has: fiber 2g, vitamin A 3%, vitamin C 9%, iron 3%


So, what is the benefit of eating ANY vegetable versus choosing vegetables that have higher nutritional values?

I think it has something to do with all the phyo=nutrients that each vegetable has.

I believe it is also changing your mindset- a lot of people, when starting this way of eating, do not eat vegetables at all.

well, they have more nutritional value than say a plate of chocolate chip cookies.
i use them for filler. helps you fill up so you don't snack on the bad for you stuff.

Not to mention the fact that the calorie count is incredibly low, especially compared to a plate of chocolate chip cookies.
