I have been pretty lax about menu planning since Thanksgiving. After a bit of struggle, I have come up with a plan for the week, or at least part of it. But, I am wondering what everyone else has planned. Please share!
I don't typically meal plan, but I'm trying to get back on track so I'm giving it a new shot this year.
Not to mention, I'm tired of salads for lunch.
Today/tomorrow I'm going to do a little precooking for this week. Dinner will be either a ceaser salad (my preference) or picking through some other type of salad (I'm VERY picky) since work is providing dinner still and nothing else approaches legal.
I'm going to try my hand at a Mushroom Casserole for breakfasts. I'll post the recipe, but it sounds really good.
As for lunches, I think I'll make Southwestern Taco Chicken and have it over spaghetti squash.
The rest of the day (snacks) are pretty much the same old same old - skinny vanilla latte in the morning, spelt pretzels or Triscuits if I get the munchies in the afternoon, and maybe a cup of yogurt or a cinnamon flatout kidz with cream cheese in the evening.

-Boston Run to Remember Half Marathon, 5/29/11 (2:35:11, no training!)
-Corporate Run, 3.5 miles 6/2/11 (36:38, 4 days after running the half!)
-BAA 10k, 6/26/11 (1:04:52, wanted to be under an hour...)
-Tavern to Tavern
I'm still working on it. Wanting to try some new things (been a bit lazy at that lately), so I'm perusing the board and other recipe sites/cookbooks today and tomorrow to come up with ideas. Also need to take stock of my freezer and see what kinds of meat I have in there... ;o)
But so far, Thursday night was 3-bean & beef chili, last night was stuffed pepper soup, and tonite is chicken satay patties w/ sesame-soy green beans and red peppers. I'll make a pot of mushroom barley soup tomorrow, but not sure if that will be dinner, as the family may be all souped-out by then!
