Today's breakfast was an Egg McNuthin': one Morningstar "sausage" patty topped with one slice ff American cheese and one poached egg. And a V8. YUM!

A serving size (which is 2 muffin quiches) of the quiche to go recipe from the SB book...I love it...and had coffee w/low fat milk and splenda.


I saved my v8 for later to have w/ my lunch as a soup.

INGREDIENTS

  • 1 (10 ounce) package frozen chopped spinach
  • 3/4 cup liquid egg substitute
  • 3/4 cup shredded reduced-fat cheese
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced onion
  • 3 drops hot-pepper sauce (optional)


DIRECTIONS

  1. Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.
  2. Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray.
  3. Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees F for 20 minutes, or until a knife inserted in the center comes out clean.


FOOTNOTES


  • Quiche cups can be frozen and reheated in the microwave. Any combination of appropriate vegetables and reduced-fat cheeses may be used.


  • I had to put the spinach a minute longer in MY microwave.


  • I added pepper and a teeny bit of salt


  • I cooked them at 375 after they were in there for 20 miutes..they were taking too long!


  • I can't wait to try variations like turkey sausage, turkey bacon, feta, diced tomatoes, etc.


  • It only made 10 muffins for me, not 12


  • Do not over fill the muffin tins, these rise!
