Calories a day??

I've started a daily food journal online which tallies my calories each day. While I've never used SBD as a calorie counting plan (been on SB since May of 06 minus my last pregnancy and the time it took to jump back in). I am now 38yrs old and watching calories in combination with SB seem to be giving me a better result. However I've noticed on the daily journal now that I'm back to 100% SB I'm having a time even reaching 1200 calories a day. I am eating 3 x's a day with 2 snacks and a dessert. However my choices seem to be low cal. Also with exercise it subtracts from the calories each day. Is that accurate? If so I've been getting less than 1000 calories a day. What should be my goal? I'm 5'4" if that matters and I'm most comfortable at 110lbs. What should I aim for calorie wise. The days I have a low total should I still exercise? Say I burn 400 calories during a workout should I consume extra to make up for it? Would something like a meal replacement shake work to make up calories?
TIA!

I don't take into consideration calories burned since it's pretty inaccurate.
as of today 116lbs. I seem to fluctuate. The lowest I've been since my baby was born in March of 08 is 114lbs.
Thanks so much for your input. Before I became preg (in June of 2007) I was 107lbs. This was after my time spent on SB.
With every year I've noticed an increasingly slower metabolism. I don't want this to creep up on me. I'd rather do what I can now to adjust.
One other quick question ~
I live a rather busy lifestyle (6 children ages range from 16yr to 11mths) a lot of practices, sports, school functions etc. This is one reason I think I'm lacking in calories many days. Today we had a birthday celebration. It's 11pm at night and after entering in my food
Thanks Cathy ~ starting today I'm making a great effort to get in all my calories. I've noticed my weight stalling and I'm sure too little food is the reason.
