Rainy Day & Monday Check-In

Good morning all my Phase 2 SBD friends and newcomers,

I hope your Monday morning is bearable today. I do remember how much I hated Mondays when I was employed. Just consider the alternative!

I hope everyone had a great weekend. It was half sunny & half rainy for me, so was able to enjoy the pool and also finally see Spiderman 2, which was fun!

Here's our plan for today:

Breakfast: JenniferAnn's Special -- which was awesome: FF plain yogurt, with blueberries, Uncle Sam, a few walnuts, Splenda, & cinnamon. This is really tasty, and would be a great idea for breakfast-on-the-go. I'll have to pack all the ingredients for the weekend en famille.

Snack: cheese stick

Lunch: caesar salad, deviled eggs

Dinner: Salmon Pinwheels, brown rice, summer squash casserole, fudgicle with PB

I'm considering putting us back on Phase 1 after our weekend so that we can start losing more aggressively again. I'm sick of this stall!

Talk to you all later --

Hugs,

Rebecca

Morning Rebecca & Everyone!

Tea & I are doing Phase 1 meals today through Friday to kick up our loss a notch. Maybe Rebecca & her dh will be doing the same next week?

How about a Monday report everyone? How many pounds and/or inches has everyone lost so far on SB? I'm not sure about myself since I've been yo yoing for too long (my fault from too much cheating & not enough exercise). I know I have 10-12 lb to lose (depending on water weight) to get back to goal. Doing a few P1 days should help get me motivated again as well as committing myself to walking every day. (How ironic is it that I find it easy to encourage & motivate others, but difficult sometimes to do the same for myself??)

Here goes....

Breakfast: V-8, LF Canadian Bacon, 2 slices 2 % cheese, coffee w/ff half/half & Splenda

Snack: (Forgot yogurt...too sleepy. LOL) I guess I'll have the mozz stick I had brought for an afternoon snack).

Lunch: sauteed beef w/veggies

no snack until I get home....then a yogurt

Dinner: More leftover sauteed beef & veggies, cup milk

Snack: either sf jello or fudgesicle

Hope everyone's day goes quickly & painlessly. LOL I remember the years I didn't work & I miss them! Giggle!

Here's my Phase 1 menu:

Breakfast: 2 eggs, V8

Snack: Cheese stick

Lunch: Big salad w/ lots of veggies, tuna

Snack: Cherry tomatoes, lemon/garlic hummus

Snack2 (since I'm headed to the gym): FF vanilla yogurt

Dinner: Pork chop w/ steamed broccoli, maybe a side salad

Dessert: SF jello

I'm going to miss fruit in the next few days. Forget the bread/cereal/etc - Fruit is what I'll miss while I'm back on Phase 1 for a bit.

I am so glad you liked the yogurt mixture. You can really play around with it. You can either mix the cinnamon and splenda right in to the yogurt then add Uncle Sam, Blueberries and nuts on top. It's just as good with strawberry slices. I just had a some for breakfast, I actually love it !!!

If I know its going to be a busy week, I just prepare the Uncle Sam, cinnamon, splenda and walnuts ahead of time. I am even take it on vacation with me to Florida next month.

I have also had the mixture on whipped topping as well for quick snack. I even made a fudgsicles sundae with it. I put the fudgsicle in a bowl with a little whipped topping and the mixture sprinkled on it. To really make it look like a sundae, try sugar free chocolate syrup.

What is Uncle Sam? Is it oatmeal? Will regular oatmeal work?

Dear Tea,

Hopefully you can find some interesting jello flavors to get you through. I like peach and strawberry/banana.

I'm planning to go back to P1 on July 28. Want to kick start more weight loss -- I'm tired of the plateau.

Anyway, I'll be following your journey back to P1 'cause that's where I'm headed, soon!

I think you should post it in the recipe section. I have to admit I haven't tried the PB yogurt yet, but I think you should get just as much kudos for this invention.

Also, it's the perfect breakfast for egg haters! It will surely be a hit with lots of folks (except the P1ers will have to wait to add the berries).

Maybe entitle your post, Do You Hate Eggs for Breakfast?

Sorry, I just love to brainstorm, can't help myself :)

Tricia,

It's SBD-friendly cereal. It doesn't taste that good on its own (imho) but in the yogurt it's nice, tastes like granola.

I'd never heard of it either before SBD. :)

Hi There

This is Uncle Sam cereal

You really could use any kind of South Beach friendly dry cereal

I don't eat oatmeal so I am not sure how tasty it would be..

Thanks, I will post it in the recipes today.. If no one likes it, we can keep it for ourselves !!!

I actually don't like eggs at all, so its why I try and come up with something healthy and long lasting for breakfast.
