Good morning! Wanted to get this started while I was at home because I don't want to get in trouble using my computer at work for personal stuff. Well today started off much better. Fell asleep early, slept the whole night, and the coffee turned out perfect. I'm on time today and I get off early to take dd and her friend to the county fair.

Tricia, glad your day's off to a better start. The fair sounds like fun.
I have to make those muffins again. I miss blueberries and oatmeal (been trying to be on Phase 1 or a very strict Phase 2).
Here's our day:
Breakfast: eggs sunny side up with tomatoes, mushrooms, onion; turkey bacon; tom juice; coffee
Snack: cheesestick
Lunch: cottage cheese, leftover black beans (cold), marinated cucumbers; PB yogurt for dessert
Snack: handful of trail mix (Uncle Sam's, choc chips, mixed nuts)
Dinner: Pulled Pork Fajitas, steamed squash & green beans, tossed salad; SF/FF ice cream for dessert, maybe with SF choc syrup
Suzy, how are you and dh doing? I'm trying to avoid the 'Manuel Laborr' aspect of my job today -- lying low at the computer!

Glad you could stop by from work today! I just snuck in since dh is on the phone with his aunt (groan....LOL) She won't even mention or acknowledge me. Dh says to her "I have a good nurse" and she will either say nothing, or she'll say "uh huh". I do not understand her attitude.
Dh is doing better. He hasn't taken a pain pill since last night. We go for walks maybe 3 times a day. He's been laying in bed but gets soar after awhile. I suggested the recliner later on if he feels up to it. I will have to go out and drive to his workplace to pick up his paycheck today. The doctor's office STILL hasn't called. I'm going to stop by there in person to demand an appointment. They should have automatically set up the 3 week follow-up appointment when surgery was scheduled.

Thank you so much for starting the thread when I've been gone. :-) You're awesome!
It's so good to hear you had a good night's sleep and that the coffee came out
perfect. That sounds like heaven to me! LOL I am such a connoisseur when it
comes to coffee. I learned to appreciate it when I spent so much time in Germany.
(In Britain,of course, I learned to love tea....they tended to just make "instant"
coffee at people's homes, which was gross).
I sure hope you & dd & her friend enjoy the county fair! Sounds like
fun. :-)

Menu looks tasty as usual. Your eggplant reminded me that I watched Good Eats
on Food Network last night where he discussed eggplant. I remember Mary (six
ducks) having problems with it. He gave me a good idea for people who've had
bad eggplant experiences....try making (or buying) Baba Ghannouj:

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 30 minutes
Yield: 1 cup
1 eggplant
2 cloves garlic
2 ounces fresh lemon juice
2 tablespoons tahini
1/2 bunch parsley, leaves only
Salt and pepper
Pierce some
holes in the skin of the eggplant (to avoid explosion) and grill over medium-high
heat turning every 7 minutes, until the skin is blackened and the body is nice
and soft. Total time for grilling is about 30 minutes. If you do not have a
grill you can roast your eggplant in a 375 degree F oven for about 30 minutes.
Remove eggplant
from the grill and let cool.
Once the eggplant is cool enough to handle, peel away the skin and discard.
Place the eggplant flesh in a colander and drain for 10 minutes. In a food processor,
combine garlic, lemon juice, tahini and parsley and pulse to combine. Add the
eggplant flesh. Season with salt and pepper and pulse to combine. Adjust the
flavor with more Tahini or lemon juice if you prefer. If it's bitter, some sugar
or honey will help. Research shows that the white variety of plant is sweeter
in flavor.

dk Misha always wants her breakfast then).

Hey everyone!
This is my last day of work for the summer! I'm sooo excited! This weekend is the big bday party that I've been getting ready for all summer, and then I leave for NY to visit relatives next Tuesday. And I don't start school again until Aug 30!!! Wahoo!!!
Anyway, here's my day:
B: 3 egg whites with spinach and lf feta
S: celery with pb
L: spinach salad with ham and lf feta, lf dressing
S: nf latte, ww toast with pb
D: lasagna with mostly chicken, ricotta, spinach, and a little ww pasta
S: nsa fudgesicle

Ooohh Maryann, your Greek pizza sounds wonderful. I'm going to try it. I ended up eating Greek today cause the boss took everyone out for lunch. I had grilled shrimp and beef w/ veggies and feta. Oh, Greek food is my favorite.
