Good Morning Ladies!
Sorry I couldn't respond individually to your posts yesterday. (Work was a zoo!) I did read them all and appreciate your support & am glad to hear you're all doing well. I'm sorry the interview didn't go well for Rebecca. I'll keep praying the right job will come along soon!
I'll check in later when the boss isn't around...LOL!
Breakfast: Usual Go Lean Kashi cereal w/ soy & regular 1% milk, coffee w/ ff half & half
Snack: Yogurt (Yes, I'm in a rut!)
Lunch: Progresso veggie soup (I was running late this morning)
Snack: sf jello
Dinner: have to use up some lean hamburger meat. Will look up a recipe when I get home. Any suggestions?
Snack: fudgesicle or sf ff pudding
Have a great day....the weekend is just a few more days away!

Suzy, you know I love that kind of challenge!
What I've made lately that we really like is like a quick & scrappy stroganoff. I bet it would work nicely with your hamburger meat.
You sautee some sliced mushrooms (I like the baby portabellas), minced garlic & sliced onions in olive oil or SBD friendly margarine. Then you remove the veggies, brown your hamburger meat, then remove the meat & pour some red wine or beef broth (or a combination) into the pan & reduce. Then add everything back into the pan along with some FF sour cream (you can use buttermilk or FF half & half if you want, but I really like how sour cream works). (You can dissolve 1T of starch or flour in some cold broth & mix in if it's not thick enough). You can add some minced fresh thyme or Italian parsley for flavoring. Add s&p.
This is nice on its own, or served over ww pasta. I like to serve over just a little bit of pasta to soak up the sauce.
Other ideas for ground beef: stuffed peppers (mix with some brown rice, fresh basil, lf shredded cheese, even cooked spinach, stuff into pepper with top removed, sprinkle cheese on top and bake in hot oven for about 30 minutes), eggplant lasagna (more work, but delicious), stuffed zucchinis (same as peppers but you scoop out the inside of the zucchini which you've halved lengthwise).
I also like cheeseburgers with a slice of LF cheese -- the easiest option!
Hope that helps!
Here's our day:
Breakfast: the usual eggs, with peppers & tomatoes; turkey bacon; tom juice; coffee
Lunch: marinated cucumbers, cottage cheese, PB yogurt
Dinner: Pulled Pork Fajitas, Black Beans; probably SF ice cream for dessert
My job search is back to square one. The other interview possibililty just dried up. And so goes the roller coaster!
Talk to you all later. Suzy, how did the first day at work go for your dh?
Rebecca
DH had beer on Monday (I know but we went to the bar to see a band for the first time in two years) and he lost 2 lbs. Crazy man, must have been retaining water :P~~~

S: Plain Yogurt
L: Pork Chop, Salad
S: Hard Boiled egg, veggie sausage patty
D: Oven fried chicken (SBD), broccoli

Oh my goodness Rebecca....I can't thank you enough!!!
Hi Aimee!
LOL on your dh.
Good morning friends!
Rebecca I read last night that your dh resigned? Is he working somewhere new now?
I'm home today because today is Marty's funeral. Marty is my daycare provider's husband. Well he was our daycare provider too because we saw him everyday for the past 6 and half years. It will be pretty hard but he's in a better place.
I need to get moving and clean this house. Dh comes home tomorrow night!!! Yahoo!

Hi Jennifer!
I hope everything's alright?
I was so glad to hear from you -- I missed you lately. Will be thinking of you today.
Am so glad you get some time with your dh. Enjoy every minute of it.
My ideas for Suzy were based on what I've done lately with ground turkey. I love it. I think I actually posted the turkey stroganoff recipe in the recipe section.
I'm having leftovers tonight, but it's the pulled pork fajitas and they are really good. Tomorrow I'm thinking of trying another crock pot recipe with a turkey breast. Have to shop on my way home tonight.
Yes, my dh got another job (he is such a talented interviewer compared to me), a much better one. I feel sorry for his current employer: I'm sure they will miss him. Can you tell I'm just a little bit biased?
Well, back to work. My boss just passed by!
rebecca
I just running crazy with making deadlines at work, two sick grandparents, birthday parties.. I could go on forever..
I just a tad burnt out. I think I will take a hot shower and go out for a south beach dinner.
I believe in you all, Take care ladies. ~ Jen
