Good Morning!


Doing the Happy Friday Dance! LOL   How are you all doing today?  Any plans for the weekend?  The colder weather is coming here today.  Brrrrr!


It's my dk Boot's 7th birthday today.  I am sooo glad she's feeling better.  Just two more days left of antibiotics for her to take.  I'll have to spend some time playing with her with her favorite feather toy. ;-)


I'm probably going to do some Phase 1 days next week to get the scale to go back down. 


Today:


Breakfast (once again on the go):  thin slices of lite deli turkey w/ 2% lite cheese rolled up.  Yogurt, coffee.


Snack: mozz stick


Lunch:  somthing healthy at home (maybe salad w/black beans).  I'm going to a class at a different campus (nearer to home) this afternoon, so it allowed me the rare opportunity to go home for lunch. :-)


Snack:  Laughing Cow cheese on RyKrisp crackers


Dinner:  I'm hoping maybe some salmon & veggies.


Snack:  sf ff pudding

Happy Birthday to Boots! I guess you guys are both Libras! :-) We have a barbecue tomorrow and a brunch party Sunday, so staying on the beach will be a little hard this weekend. I'm bringing a pear/walnut/feta salad to the BBQ and will eat lots of that to avoid temptation, and hopefully there will be some sort of egg dish at the brunch.

Today for me:

Breakfast: spinach frittata with salsa (from SB book)

Snack: mozzarella cheese and a very tiny sample of the pear/feta salad that they were sampling at the supermarket. It's definitely Phase 2 friendly if anyone is interested--and delicious!

Lunch: whole wheat pita with tuna fish

Snack: definitely a yogurt day for me (probably PB plain ff yogurt)

Dinner: not sure?

Exercise: step aerobics class and abs/muscle conditioning (1 hr 15 min.)

S: Leftover Tofu Caccitore (DH calls tofu whale blubber so I get to eat it all)

Hello Jorie!

I just got home from a torturous "staff development" class at the college. LOL We are required to take 21 hours a year as staff members.

Boots is here on my lap. I let her outside briefly on our deck for some fun on her birthday. It is getting too cold though (50 degrees with a brisk wind) so I brought her back in within 5 minutes.

That pear feta salad sounds delicious! Do you have a recipe?

You get a gold star for the exercise! You're really an inspiration.

Good luck this weekend at the BBQ. Keep us posted on how it goes.

Where did you get the tofu recipe from? I'm always looking to try new things. :-)

I hope you will have a nice weekend. I'm trying to decide what to have for dinner. Either fish or else whatever dh wants to have. He likes to go out on the weekend....which sometimes isn't a good thing for my diet. LOL

The Tofu recipe came from the SBD cookbook. I have to say hands down that is the best cookbook I have ever owned. I am not just saying that because I love SBD. Usually I will love 1-3 things out of a cook book and hate everything else but the SBD cook book is so fantastic! You have to understand tofu better than the book though. The book tells you to drain the water by pressing with paper towels. Heck no! If you want good tofu put between two plates in the sink and put a heavy object on top, like the canned tomatoes. Allow to drain a few minutes, pour off the liquid, flip and drain again. I also fry in more oil than it calls for or the texture is just nasty. I use about 1/8 of an inch of oil in my frying pan.

Thank you Aimee! Dh had bought me that cookbook, but I'm embarrassed to admit I haven't tried any recipes yet. I definitely will now!! Thanks for the tips. I want to eat more vegetarian again so this will be a great recipe for me. :-)
