Am I doing OK on daily menus?

Hello:
I am on Day Three of Phase One and am wondering if the meals I am eating look OK?
Day One:
Breakfast: 2 cups Bean Salad (made with green beans, gazpacho beans, green pepper, red pepper, extra virgin olive oil, vinegar, and splenda)
Snack: celery with 1 wedge laughing cow
Lunch: FF tuna salad (tuna, FF mayo, onion, celery)
Dinner: Salad with ginger dressing (dressing is homemade with olive oil, ginger, splenda, garlic, onion, tomato, and herbs)and soy burger
Day Two:
Breakfast: celery with laughing cow
Snack: 1 cup FF tuna salad
Lunch: salad with vinegar and oil
Dinner: Homemade Vegetarian Chili
Snack: Steamed Asparagus
Do these meals seem OK?
