Hi all! I am on week one of phase 2 and doing well. I don't think the scales have moved much, but my clothes are felling much better. As long as I see results some how, it makes it easier!

I have the following recipe and I was hoping you could tell me if it is SWB friendly.

Pecan Pancakes

2 C Almond Flour

2 t Baking Powder

1/2 t Salt

2 T Splenda

2 Eggs

2 C Cream (I would use ff 1/2 & 1/2 or ff evaporated milk)

1 t vanilla

1/2 C Pecans chopped

This is really good, but I don't want to eat it if I shouldn't. I have used quite a bit of almond flour in the past - is that still ok?

Also, my husband and I are going to eat out with friends Friday evening. The restraunt we are going to won't have a lot of friendly food. Wouldn't it be better to order a chef salad even if they don't us ff cheese? I would not eat any dressing.

Any input is greatly appreciated.

I think it kind of depends on the person. Technically the foods are allowed but the almond flour is a lot of nuts. I personally can eat a gob of nuts and have no problems. How many almonds does it take to make almond flour? Can you substitute some WW flour or some oat flour for some of the almond flour? How many calories does the finished product have?

I checked with the SB official nutritionist and here's what she has to say about almond flour:
Almond flour would be allowed if it is only ground almonds and not mixed with other types of refined flour. This type of flour would be counted as a nut serving, so don't overdo it with this product. If you try it, monitor for cravings.

When asked about a similar recipe for Almond Pancakes this was her response:
ALMOND PANCAKES


1/2 C almond flour


1 pkt Splenda


2 eggs - beaten


1/3 cup of seltzer water


1 tbsp. FF half & half


1/4 tsp salt


dash of cinnamon


Combine all ingredients and cook on a hot griddle lightly greased with

I'm sure it's a great idea for when you are well established in phase 2 as an occasional treat or when maintaining on phase 3.
