PHASE 2 - MORE LIKE PHASE 1.5

I've been so busy lately & I'm finding myself slowly sliding into Phase 2....I'm still eating most of the Phase 1 foods but I've been incorporating SOME Phase 2 foods - gradually. I took your advice, Cathy & have added peanut butter to my apples for a snack.

I know I've lost a lot of inches because I saw myself in some recent family photos & I was really amazed at how much thinner my face got & just overall appearance - really getting some lean-ness going on here & I like it!

Honestly, the only thing sorta holding me back is the cost of the groceries - it seems I was spending about $50 a week on food just for me. Plus it's really difficult for me to cook these meals for myself.....I seem to be starving by the time I'm supposed to have a regular meal. I still snack on nuts, cheese & celery - fast stuff I can grab.

I think I need to be more organized though - My kids tire me out so fast & it's all I can do to take care of my diet needs right now.

Still working out 5 days a week....Trying NOT to weigh myself too often too - with Halloween just passing - I had a few mini size candies & allowed myself that pleasure....I can't deal with GUILT anymore its too much to handle at times.....I just get right back on track though so I feel okay about this.

Just thought I'd check in & give a little update!

Thanks for listening!

Maggie - yes, I usually make something for my kids to eat THEN I make my own meal. I usually try to do both at the same time but with little luck......Any suggestions would really be appreciated!

Hi Yvette, with kids and different meals, there are a couple of ways to go about this.

WOW Maggie that was some reply~ lol

Thank you for taking the time to type all that! hehhehe

My children that are here at home with us are 7, 3 & 2. They are VERY picky!!!!

I know that if I make healthier meals that they WILL adapt and that's where I want to be! I want them to eat better.....At this stage they just like the regular icky kid foods like chicken nuggets, pizza, hamburgers, pasta.

I am dreading the stage where I have to lay my foot down and say THIS IS DINNER - EAT IT OR DONT EAT IT - BUT THIS IS WHAT MOMMY MADE TONITE. Kids are tough but I know they DO adapt easily, I'll just have to work on that!

Thanks again for the ideas!

I appreciate the email......Yvette

I can understand your cooking woes! Maybe you can find a happy compromise instead of making separate meals. I have small kids (4 and 2), and a husband who still loves his starches. So I have adapted some of my cooking methods too.

Here are some of the meals we do.

- One thing that is very common in our house is for me to make something like grilled chicken or baked porkchops, veggies such as green beans, and noodles or rice. I skip the noodles, and have two servings of the veggies, or make myself a small side salad, or cut up some cucumbers. My standard dinner is 1 protein, 1 hot veggie and 1 cold veggie.

- We like to do stirfry meals, too. And since I've been doing SBD, instead of doing everything all mixed together in the wok, we make it all separate. Veggies and meat in the wok, and the rice on the side. I eat the stirfry in a big bowl, DH has his over rice, and the kids just eat rice with butter or cheese, and maybe a cut up apple to round out the meal.

- Another favorite is "taco night". Mine ends up being taco salad, with greens, tomatoes, onions, beans, taco meat and cheese. DH uses tortillas and makes soft tacos. The kids either have soft tacos or I made them a quick cheese quesadilla.

As you see, I am cooking a variety of foods that can be served ala carte, but not cooking a special meal for anyone. Sometimes I forget, and realize at the last minute that kids aren't going to want what I made, so they get a PB&J sandwich. They are happier with that than any kind of fancy cooking anyhow. LOL.
