As long as I get my 4.5 cups of veggies daily does it really matter if I skip them at breakfast? It is hard for me to get 1/2 cup in at breakfast. I have to be at work so early that it is a lot easier for me to grab a yogurt or some mini quiches (which don't have 1/2 cup of veggies-some but not 1/2 cup.) And I hate V8- I love tomato soup and tomatoes so I thought V8 wouldn't be bad but I can't stomach it.

I have the same issue. Can't stand V8, despite trying to like it! And most mornings I can't be bothered to dice veggies for an omelette. So, I try to opt for a mid-morning veggie snack instead, such as celery with dip.

LOL, have to agree with you about V8! dh bought it one week when I delegated shopping to him, and it was almost as bad as the Jennie-O turkey bacon he bought that day!

So now I do the shopping all the time. It's Campbell's tomato juice and Louis Rich bacon for us!

I've found that when in a rush to get to work, I can just pour my tomato juice into a commuter coffee cup (you know, the themal kind you can get at places like Starbucks) and drink it as my morning snack. I also find spinach omelette really delicious for breakfast. You can do all your prep the night before (slice onions, set out your pan, mix the eggs, parmesan and half & half) and cook it up quickly in the morning. Buying bags of fresh baby spinach speeds up the process too.

about the 4.5 cups of veggies - approximately how many servings do you think that is? I like to aim for the 5-10 servings recommended, and I never, EVER limit myself in servings with any kind of SBD-approved veggie, so I think I get enough (ate the entire spaghetti squash for lunch yesterday - I think that was about 4 cups right there!) anyways, just curious.

More on the V-8 issue:

I have found that various brands of vegetable juices taste different. Try Sacramento brand or your local store's brand (BTW, both of which are cheaper than V-8). Also, as was mentioned previously, plain tomato juice can substitute for V-8. I like to add flavoring to vegetable juice such as fresh squeezed lemon or lime, tabasco sauce, celery salt is good with regular tomato juice. You can even make a virgin bloody mary - great flavor, but maybe a bit spicy for some in the am!

A serving size of most veggies is 1/2 cup (more for the leafy ones like lettuce). So 4.5 cups would equal 9 servings. I actually use a measuring cup as my serving utensil a lot of times!

This would be an example of plenty of veggies:

B: eggs w/ 1/2 cup diced zuchinni (1 serving)

S: 1/2 cucumber sliced (1 serving)

L: large salad w/grilled chicken and ranch dressing (2 cups lettuce, plus 1/2 cup other veggies = 3 servings)

S: cheese stick

D: steak w/ marinated mushrooms and onions, cooked carrots, side salad (1/2 c each of carrots and mushroom mixture, 1 c greens = 3 more servings)

S: SF fugsicle

Hi, I also love tomato soup but the first time I had tomato juice and V8, I gagged! My trick is to put it in a bowl or coffee mug and heat it up so it reminds me of tomato soup. THis has worked for me and I can drink it now without a problem as long as I *think* it's tomato soup, lol.

Just an idea.
