Need some expert advice on daily serving

I am trying to get organized, so I'm putting together a checklist to stick on my fridge. For each day, I'm listing the min and max servings of each food category. That way I can just check it off as I consume it, and know where I stand. I feel like I've been too easily saying "Oh, I can have just this one thing...." and those "one things" keep adding up. It will also be a good way to see if I'm inadvertantly having too many fruit and starches combined.

So this is what I have so far, based on the chart that we refer to here on the board. Each day on P2, we are allowed:

Lean Protein: unlimited

Vegetables: unlimited, min 4.5 cup per day

Fruit: 1-3 per day

Starch (1/2 c): 1-3 per day

Milk/Yogurt: 2 cups per day

Fat: (oil or mayo) 1 tsp per meal

Water: Min 8 oz with each meal & snack

Where does cheese fit in? What about salad dressings? Should I have a separate condiment category, or are they unlimited as long as they fit within the criteria? Any other minimums or maximums I should include?

I know this is a bit beyond what most people want to do on SBD, but I'm trying to get a system to fall back on when I go off track. I'm sick of returning to P1, and I don't want to go back to WW, so this is my compromise. :)

Thanks for the quick response. I think I'll say 1-3 oz of cheese for now, and see how that feels. I eat a lot of cheese for snacks, so I don't want to limit it too much. But at the same time, I know it can add up! LOL

What about beans? Are they ever an issue with eating too many? Seems like it's normally a matter of not eating enough! ;-)
